Moutabal today for lunch with flatbread so good, as a kid I used to hate aubergines, but as I grew I got to love this delicious meaty vegetable, specially baked and stuffed aubergines , which is a dish my mum bakes and so very delicious its one of my favourite ways of having aubergines.
moutabal is a wonderful dip served in this household with flatbread or carrot batons., love to serve with a few pomegranate seeds so so delicious.
This is my way of making it and these are the ingredients:-
2 Large aubergines roasted
2. Tbs tahini paste
2. Tbs greek yoghurt
2-3 garlic cloves
Juice of 1 lemon
Olive oil to drizzle
Sea salt and ground black pepper
pinch of ground cumin
pinch of smoked paprika
fresh finely chopped parsley sprinkled
pomegranate seeds (optional)
remove flesh from aubergine after roasting and finely chop, place in a bowl , add tahini paste , pinch of ground cumin ,garlic cloves crushed with the sea salt to a paste yoghurt,lemon juice and mix until all blended, adding more tahini or yoghurt to your desired taste, just before serving drizzle olive oil , sprinkle smoked paprika and garnish with pomegranate seeds and chopped parsley.
