Shakshuka for lunch, its one of those dishes you can make when you have few ingredients available, there are so many different version to a good shakshuka and this is mine.
Today I have only added few garlic cloves sautéed in good olive oil , added two peeled and diced tomatoes, 1 1/2 cup crushed canned tomatoes, teaspoon of ground cumin, 2 tablespoons of tomato paste,1 teaspoon of Harissa, 1 tablespoon of pomegranate molasses to balance out the sweetness from the tomatoes, salt, and ground black pepper , once the sauce is ready, I always watch for the sign when the oil comes to the surface, then I added six eggs from our free range chickens which are amazing, one of them as you can see had two yolks,
and then a good sprinkle of fresh chopped coriander sprinkled just before serving,
I cannot explain how good this was, soaked up all this beautiful sauce with the sourdough I baked earlier on this morning.
